The 6GHz is the maximum frequency at which ADC will attenuate signal by 3dB comparing to low frequency, while 2.5 GS/s means that you can digitalize signals with up to 1.25 GHz (Fs/2) bandwidth.
So you can sample signals with up to 6 GHz carrier and up to 1.25 GHz bandwidth.
The carrier with CF=6GHz, BW=1.25GHz is the largest frequency range you can receive with Gen3 ADC.

Other ways to validate the same in ZU216 EVK. For eval board you may use RFDC eval tool instead of RF Analyser.

When you are trying to use 1.5 gsps and higher values as a sampling/carrier frequency, it may come under the different Nyquist zone. Kindly refer pg 269 from the below link,
